I took my Minotaur out to another place and shot a Sentinel causing his buddies to show up and attack me. THEN my Minotaur fought them. So maybe the Sentinel attack on settlements doesn't trigger the Minotaur.

Having it with the sentinel AI installed ensures that when I'm battling sentinels and the AI component gets busted I still have a redundant system keeping the Minotaurs autonomous combat abilities. Basically it turns it into a walking tank and I love it.
